Researchers at the Agricultural School of UPCT have developed a novel system for a fortnight to keep the watermelon flavor and freshness that offers freshly cut.
This is a pioneering technology development in Spain has put on the market packaged cups of watermelon, in small portions, and ready for consumption.
The project has been developed jointly with the company PozoSur, Eagles.
The watermelon is sold under the brand Periquetes, and is packaged in trays of 200 grams, cut into cubes, ready to prick with a fork or toothpick.
This presentation avoids the hassle of cutting the fruit and saves space in the fridge, because the whole watermelons tend to be fairly large.
The principal investigator, Prof. Francisco Artes, points out that watermelon cubes remain for two weeks and is guaranteed fresh-cut quality from the standpoint of color, flavor, aroma and most importantly, microbiological safety.
The project was developed by researchers at the group and Cooling Posrecolección UPCT and PozoSur company.
