The Fish Kitchen with Art workshop this September in Llampuga, Llampúa or Dorado (Coriphaena hyppurus), a fish of intense metallic and yellowish blue that lives in shallow depth and feeds on a great variety of prey. flying fish and needles.
Known in some areas as a dolphin because of its similarity, it is a fishing species that comes "shelter" to the boat, looking for the shade in the sea.
It is caught with gill nets, morunas, sedales and hooks and is a good alternative to the consumption of other species such as tuna and swordfish.
After the success of the July and August workshops held in Cabo de Palos, Pescados con Arte returns to Cartagena, specifically to Santa Ana where, in a garden with beautiful flowers, tall palm trees, lush woodland and a beautiful walk of jasmine, participants will have the opportunity to approach the llampuga through a kitchen workshop where they will learn how to prepare golden brochette, lemon leaves and artichokes with Iberian vinaigrette by the hand of the chef Miguel Hernández Schönwälder, with fish contributed by the Brotherhood of Fishermen of Cartagena.
In addition, they will discover the benefits of artisanal fishing and marine reserves of fishing interest.
It will be in the restaurant Casa Beltrí, in Huerto de los Bolas, 2 30310 Residencial Santa Ana Cartagena on September 30 from 11:00 a.m. to 1:00 p.m.
The cooking workshop is aimed at adults from 16 years and has a capacity limited to 20 participants, requiring prior registration by writing an email before September 28 to carmen.molina@columbares.org (indicating the name and surname of the participant and telephone contact).
Fish with Art is a commitment of the Department of Industry, Tourism, Agriculture, Fisheries, Rural Development and Coastal of the City of Cartagena to value the artisanal fishing of the coast of Cartagena.
It is a selective form of fishing that is respectful of the environment and with little impact on habitats of high ecological value such as the Posidonia oceanica grassland, which also promotes local consumption and proximity.
But artisanal fishing is also culture and gastronomy, a traditional way of life with important social importance for the economy of Cartagena.
For the development of this initiative, the City of Cartagena has the Columbares Association, in collaboration with the Fishermen's Guild of Cartagena, the University of Murcia and the Association Amureco, in addition to the gastronomic advice of Alberto Hernando Magadan.
Thanks to the project Pescados con Arte, the Carthaginians have discovered species of seasonal fish caught with artisanal fishing gear - such as the blond, the chanquete, the moreno, the kingfisher, the melva, the lean, the bacoreta or the spetón through theatrical pills in fresh fishmongers and educational centers, gastronomic workshops in restaurants for children and adults and children's craft workshops.
