About thirty students and professors from the Higher Technical School of Agricultural Engineering of the Polytechnic University of Cartagena (UPCT) have harvested, together with participants from the leisure gardens, some 6,000 kilos of the variety of Merseguera grape, recovered by researchers from the Polytechnic, and whose vineyards are located in the Tomás Ferro farm.
The objective of the Polytechnic of Cartagena is to obtain the ecological and varietal certificates for the grape, although the director of the ETSIA, Arantxa Aznar, assures that only the technician in charge of certifying that the grape is organic and who is responsible for it, must go to the farm. the variety Merseguera.
The harvest has started on Tuesday at 7 in the morning at the Tomás Ferro farm and has lasted until past noon.
This year the harvest has begun before other years to ensure that the grape, with which the Tomás Ferro wine will be made, maintains its natural acidity.
The harvested grape will be stored until Thursday in cold rooms of the farm with a temperature of 8 ° C.
Next Thursday the grapes will be removed from the chambers, the bunches will be destemmed and the grapes will be squeezed.
The resulting must undergoes a maceration process for 24 hours.
After letting the must rest and obtaining a clean one, the fermentation process of the wine will begin, during which the cold chain is maintained to preserve the characteristic aromas of this wine.
A COMPETITION TEAM
On the other hand, the ETSIA could count the next course with a competition team that is responsible for making this wine.
The director of the School assures that the students of Agronomists are finalizing the details to start up the next course a competition team to elaborate the wine and present it to different contests.
